Hopefully everyone's first day of the Challenge went well! Write down your info daily so it is done while the info is still fresh and you're not having to estimate or make up what you did. At the end of the day, this challenge is meant to improve yourself and keeping an accurate journal will improve the likelihood of that. Even if you aren't able to make huge leaps in these 6 short weeks, you'll be able to get a snap shot, with accurate data, of where you are now... and that will make it easier to plan for where you want to go. That is difficult to do without good data of your starting point.
ERICA’S KILLER CURRY
INGREDIENTS (ORGANIC & HORMONE FREE)
3 LBS. STEW MEAT (GOAT, LAMB, BEEF, or CHICKEN)
4 LIMES JUICED
SALT/PEPPER (OPPTIONAL, TO TASTE)
6 SERRRANO PEPPERS (SEEDED & CHOPPED)
I BUNCH SCALLIONS (SLICED)
1 LG. ONION (COURSE CHOPPED)
5 CLOVES GARLIC (MINCED)
5 TBS. CURRY POWDER
¼ CUP COCONUT OIL
I BUNCH FRESH THYME
1 28 0Z CAN CHOPPED TOMATOES (OR FRESH IN SEASON)
1 14 OZ. CAN LIGHT COCONUT MILK
5 CUPS WATER
RINSE MEAT WELL, ADD LIME JUICE, SALT & PEPPER, SERRANOS, SCALLIONS, ONION, GARLIC, ALLSPICE & CURRY. MARINATE IN FRIDGE A MINIMUM OF TWO HOURS (PREFFERABLY OVERNIGHT). HEAT COCONUT OIL IN LARGE POT UNTIL VERY HOT. ADD MARINATING MIXTURE, AND SAUTE UNTIL SLIGHTLY BROWNED. ADD TOMATOES, COCONUT MILK, WATER & THYME (TIE THYME BUNCH TOGETHER WITH TWINE TO MAKE IT EASIER TO REMOVE AFTER COOKING). SIMMER 2-3 HOURS STIRRING OCCASIONALLY UNTIL MEAT IS TENDER. REMOVE THYME BUNCH, (LEAVES WILL HAVE FALLEN OFF).
I PREFER TO EAT AS A STEW. CURRIES ARE TADITIONALLY EATEN WITH RICE, YOU CAN EASILY RECREATE THAT IN A PALEO FRIENLDY WAY BY STEAMING CAULIFLOWER & RUNNING IT THROUH A RICER. A GREAT WAY TO ADD ANOTHER VEGGIE!
